Vegan & GF Banana Bread
Here it is- my favorite banana bread recipe! I love making this on a Sunday and having it for breakfast for the week. Enjoy and let me know what you think!!
Ingredients: (10 slices)
- 3 ripe bananas, mashed
- 3 tablespoons chia pudding (1 tablespoon chia soaked in 3 tbsp water) Can use 1 egg if not vegan!
- 1/4 cup coconut oil, melted and cooled
- 1/3 cup creamy peanut butter
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cup oat flour (quick oats pulsed in blender until flour consistency)
- 3/4 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Dash of salt
- 1/3 cup chocolate chips (optional)
- 1/3 cup chopped walnuts (spread on top)
Directions:
- Preheat oven to 350 degrees and grease a bread dish with coconut oil or line with parchment paper
- In a large bowl, mix together wet ingredients. Then add in the dry
- Fold in dark chocolate chips then pour into bread dish
- Sprinkle chopped walnuts on top
- Bake in oven for about 1 hour. A toothpick should come out dry when it is ready! Cool before slicing
