Homemade Poptarts

We are over 6 weeks into quarantine and I have to say, my cooking and baking is really benefitting! I am back with another baked good recipe that I most likely would never had made out of lock down, mostly because it takes a little longer than my typical baked goods which I make in 20 minutes. I don’t know about you, but I grew up on sugary cereal and Pop tarts and sometimes I still crave a bowl of Cookie Crisp or a Poptart out of nostalgia. These are a fun afternoon activity and will definitely be a hit! I made 3 different varieties because I just couldn’t decide :)

Ingredients:

Dough:

  • 2 cups all purpose flour (I used whole wheat flour and it wasn’t as flaky and light as I would have liked)

  • 1/2 cup oats

  • 8 tablespoons (1 stick) cold salted butter

  • 1 egg beaten (to brush before baking)

S’mores filling (for 1 poptart, adjust if using for more than 1)

  • 4 large marshmallows or 1 cup of mini marshmallows

  • 1 teaspoon of water

White chocolate cherry filling

  • 1/2 cup fresh or frozen cherries, chopped in quarters

  • 1 teaspoon of vanilla extract

  • 1 teaspoon lemon juice

  • 1 tablespoon of honey

  • handful of white chocolate chips

Peanut butter chocolate filling

  • 2 tablespoons creamy peanut butter

  • 1/2 cup chocolate chips

White chocolate glaze (for the cherry poptart)

  • 1/4 cup white chocolate chips

  • 1/4 cup powdered sugar

  • 2-4 tablespoons milk

Chocolate frosting (will give you extra to use on other creations!)

  • 1.5 cup confectioners' sugar

  • 4 tablespoons cocoa powder

  • 2 tablespoons milk or water

  • 2 teaspoons vanilla

Directions:

  1. First, make the crust. In a food processor or blender, combine the flour and oats and pulse until the oats are ground. Add the butter and pulse until the mix clumps together .Add cold water, 1 tablespoon at a time until the dough comes together and forms a ball. Take out of the blender and roll into one large ball

  2. Flour a board and roll the dough into a thin rectangle. Cut into an even amount of rectangles for the Poptarts. Set aside on a baking sheet with parchment paper.

  3. In a sauce pan, create the fillings. Add the ingredients for the filling of choice and keep on low heat until melted. I made one filling at a time to keep my dishes at a minimum. Add a heaping spoonful of the filling on one rectangle and place the other half on top, sealing together with your fingers and clamping the edges with the side of your fork

  4. Place poptarts in the fridge for 30 minutes to an hour. Preheat the oven to 400 degrees F. While in the fridge, make the glaze. Place the ingredients in the saucepan on low heat until melted together. Pour each in a bowl and place in the fridge until the poptarts are ready to glaze.

  5. After at least 30 minutes, take the poptarts out of the fridge and brush with the beaten egg. Bake for 12 minutes

  6. Let cool completely before glazing. Using a butter knife or back of a spoon add a thick layer of the glaze to the top of each poptart. Sprinkle the chocolate flavors with sea salt and serve!
