Chia Pudding Five Ways
I can’t get enough of this super seed and I put them in just about everything. Chia is the Mayan word for “strength”. The warriors would fuel up on chia seeds before their long treks through the desert. Chia is known as a super food for a reason. 1 tablespoon provides about 6 grams of fiber, 2 grams of protein, and all ten amino acids making it a complete plant protein. When chia seeds are added to liquid they gelatinize and expand.
Chia pudding makes a great breakfast or snack. Play around with the different flavor varieties and let me know which you like best!
Chia Pudding: 4 servings
2 cups coconut or almond milk
½ cup chia seeds
½ teaspoon vanilla extract
¼ cup maple syrup
¼ teaspoon cinnamon powder
Directions:
Blend all ingredients except chia seeds in a blender until smooth (including any added flavors, fruits or chocolate). Whisk in chia seeds.
Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel.
Variations:
Chocolate: Add ¼ cup cocoa powder
Strawberry: Add ½ cup fresh strawberries
Chai: Add 1 teaspoon cinnamon powder and a pinch of cardamom and cloves
PB&J: Add 3 tablespoons of natural nut butter and 3 tablespoons of jam
Matcha: Add 1 tablespoon of Matcha powder
