Banana PB Cups (GF)

With passover coming up I’m playing around with some flourless kosher for passover treats! These banana peanut butter cups were kind of made up as I went using whatever I had but they turned out delicious! Let me know what you think! These will make an awesome Easter lunch addition next to the chocolate eggs as well! xx

Ingredients:

  • 3/4 cup unsalted butter, melted

  • 1 cup brown sugar (or coconut sugar)

  • 1 egg

  • 1 and 1/2 cups coconut flour

  • 1 teaspoon vanilla extract

  • 1/3 cup peanut butter (almond butter will work too if you don’t eat peanuts over Passover!)

  • 2 ripe bananas, mashed

  • 1/2 cup chocolate chips (I used white chocolate chips!)

  • Dark chocolate pieces to place on top (or use Reece’s PB cups!)

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking soda

Directions

  1. Preheat oven to 350 degrees and grease a muffin pan or use cupcake baking cups

  2. Melt the butter and combine with sugar. Add the egg, vanilla extract, peanut butter, mashed bananas, baking soda, salt and lastly the flour

  3. Fold in the chocolate chips and scoop into the cupcake cups

  4. Place the chocolate chunks on top of each cup

  5. Bake for 25 minutes or until the top gets golden. Allow to cool for about 10 minutes and serve!
